Vegan Banana Ice Cream

It’s getting hotter here and it’s time for some refreshing ice cream! Actually, who says it has to be hot outside to enjoy some delicious ice cream, especially when it’s healthy, egg-free, dairy-free and easy to make?

 

 

The main ingredient for our vegan ice cream is banana. Frozen banana. Now, some people say that an ice cream must be creamy and milky, so if that’s your case, you can add some coconut fat. You can also add some smooth peanut butter or any fruit you like to play with the flavors. Cinnamon, vanilla extract, cocoa or cacao powder, nuts are great additions too. However, you don’t need any sweetener, bananas are packed with all the sugar you need.

I put some shredded coconut in the light part of my ice cream and the dark one is made with some cocoa powder. These are all ingredients I used to make my refreshing and delicious ice cream.

 

 

 

Ingredients for 2 portions:

 

  • 3 bananas
  • Condiments of your choice

 

 

Directions:

 

Slice your bananas and put them in the freezer for a few hours. If they are too hard when you take them out, give them a few minutes to soften a bit before you put them in the blender or the food processor.

 

 

Process them until you have a homogeneous mixture without any chunks. Add your condiments, if you decide to use any, and mix everything well.
You can eat it straight away while it’s soft and creamy or put it back in the freezer for a while.
