Delicious Vegan Fruit Muffins
Today’s healthy dessert is my favorite vegan fruit muffins. The idea for this recipe came to me when I saw photos of a delicious-looking fruit cake. However, it turned out that this cake required more than 20 ingredients and 3 different processes to be prepared.
So, here’s my super easy-to-make recipe for delicious dried fruit muffins that require only a few ingredients and are quite cheap. They are completely dairy-free and gluten-free, and they turned out to be a favorite dessert at home.
- 1 ripe banana
- 1 1/2 cups of oat flour
- 2/3 cup of dried fruit
- 2/3 cup of drinking water
- 1 teaspoon of baking powder
- Cinnamon – optional
- Nuts/seeds – optional
Soak your dried fruit in drinking water for a few hours or overnight. You can soak some nuts or seeds too – I used cashews and sesame seeds, but this is optional. When your fruit is done soaking, keep the water. If some of your dried fruits are bigger, chop them a bit. You can use any fruit you like: dates, raisins, berries, etc.
Mash the banana. Add the water with the fruit and nuts to it. If you prefer, you can use some milk of your choice instead of the water where the fruit was soaked. It’s up to you.
Add the oat flour and the cinnamon and mix everything well. You can make oat flour at home – just grind the oats in a food processor or a blender.
You don’t need any sweetener with this recipe but if you like really sweet taste, you can add a sweetener of your choice.
I usually eyeball the mixture, so you may need to add more water or oat flour. The batter you should have is shown below. By the way, you can make a whole cake instead of muffins but I think muffins are easier to bake.
They usually take about 30-35 minutes in preheated oven on 180°C (350°F) or less if your oven has a fan. Check them after 25 minutes with a toothpick. If the toothpick comes out clean, they are ready. Cool down before you eat them.
