Here’s a delicious vegan and gluten-free crispy cookie recipe. Enriched with matcha powder and coconut flavor, these yummy cookies are perfect for Christmas.
When I posted my vegan shortbread cookie recipe, a lot of people asked me for an oat flour substitute that’s gluten-free. This recipe has always been a little bit tricky, but it turned out that coconut flour can work too after a few adjustments.
I wanted to make these cookies extra festive, so I used a Christmas tree cookie cutter to shape my cookies like little Christmas trees. I should let you know that this dough isn’t the best dough to cut shapes like Christmas trees or stars out of, but it still works after you refrigerate it for a while. However, if you decide to shape regular circle or rectangular cookies, you won’t have any problems.
Optionally, you can make your cookies look snowy with some powdered sugar.

Ingredients
- ¼ cup coconut oil
- ¼ cup coconut milk (or other milk of your choice)
- ½ cup rice flour
- ¼ cup coconut flour
- ¼ cup desiccated coconut
- ½ teaspoon matcha powder
- Coconut sugar to taste
- Vanilla extract - optional
Instructions
- Mix the soft coconut oil with milk, matcha, vanilla and sugar.
- Add the rice flour, coconut flour and desiccated coconut. Mix until you have a homogenous mixture.
- Put the dough in the fridge for 10-15 minutes.
- Preheat your oven to 170°C (325°F).
- Roll the dough and cut it into Christmas tree shapes. You don’t have to dock the cookies because this actually can make them crumble. I made shallow holes in the cookies for decoration.
- Place the cookies on a baking tray covered with baking paper and bake for 12-15 minutes. Keep an eye on them, because they burn easily.
- Let them cool down and enjoy!
