As I mentioned in my previous post, apples are my favorite autumn fruit. However, what is fall without pumpkins?
Here’s a delicious pumpkin cookie recipe that you’ll love even if you don’t like pumpkins. Also, check out my vegan pumpkin cookie recipe here. And don’t forget to take a look at my pumpkin truffle recipe.
These cookies are soft, moist, and taste amazing. The recipe is also very flexible. I used oat flour and desiccated coconut, but if you want to make the recipe gluten-free and paleo-friendly, you can use coconut flour too.
I also added some chia seeds, black sesame seeds, pumpkin seeds, and some chopped chocolate. This step is optional, you can add nuts, dried fruits, or just skip this part completely.
Notes
I used oat flour, coconut flour, and desiccated coconut, but if you want to make the recipe gluten-free and paleo-friendly, you can use only coconut flour.
Ingredients
- 1 egg
- 4 tablespoons pumpkin puree
- 2 tablespoons tahini
- ¼ cup oat flour
- 2 tablespoons coconut flour
- 2 tablespoons desiccated coconut
- ½ teaspoon baking powder
- Pumpkin spice (cinnamon, nutmeg, ginger, and clove) to taste
- Chopped chocolate or chocolate chips – optional
- Seeds of your choice (I used chia, black sesame and pumpkin seeds) - optional
Instructions
- Preheat your oven to 180°C (350°F).
- Since I didn’t use pumpkin puree, I had to mash my cooked pumpkin first. If you use pumpkin puree, skip this step.
- Mix the eggs, pumpkin puree, and tahini.
- Add the oat flour, coconut flour, desiccated coconut and baking powder. Mix everything together.
- Add the spices, seeds and chopped chocolate, then mix again.
- Take spoonfuls of the mixture and shape cookies out of them.
- Place them onto a baking tray covered with baking paper and bake for about 12-15 minutes.
- Let them cool down and enjoy!
