My Ferrero Rocher Inspired Cake

I had my birthday recently, and I decided to make my own cake. I love chocolate and hazelnuts, so I made a Ferrero Rocher inspired cake.

It’s a dairy-free and gluten-free cake. To make the recipe paleo-friendly, use coconut flour instead of flax meal. However, I like using flax meal, because it makes the cake a little bit lighter.

 

I decided to share how I made my cake just to give you a few ideas. It’s quite rich and decadent, but it’s a birthday cake after all. The recipe makes 8-10 big slices.

 

 

It was a simple one layer cake. The way I made the cake is similar to my cakey brownie recipe. However, I doubled the ingredients and used some hazelnut butter instead of tahini. Also, I replaced some of the flax meal and desiccated coconut with some coconut flour.

I baked for about 18 minutes, and I let it cool down completely.

 

Then, I made ganache by combining some melted dark chocolate with some hazelnut butter, coconut oil, and a little bit of coconut milk.

When the ganache cooled down completely, I added some ground hazelnuts. Then I spread the ganache over the cake.

 

 

I decorated it with some chocolate-covered hazelnuts and some truffles that I made the day before.

The recipe for the truffles or bliss balls is very simple. I ground some hazelnuts, then added a few dates, cocoa powder, and hazelnut butter. I mixed everything in the food processor.

Then I rolled small balls out of the mixture and put them in the fridge overnight.

 

Finally, I sprinkled some more ground hazelnuts over the cake.

It was heavenly and everybody loved it!
