Here’s a delicious and easy-to-make cookie recipe for walnut lovers. It’s also completely gluten-free and dairy-free.
The best part is that it requires only 5 ingredients: walnuts, eggs, flax meal, some baking powder and some sweetener of your choice. The sixth ingredient, cinnamon, is optional but I just love the combination of walnuts and cinnamon.

Ingredients
- 1 cup of walnuts
- 2 eggs
- 4 tablespoons of flax meal or ground flaxseed
- Sweetener of your choice (I used 3 tablespoons of maple syrup)
- 1 teaspoon of baking powder
- Cinnamon – optional
Instruction
Preheat your oven to 180°C (350°F).
Ground the walnuts.
Whisk the eggs, add the rest of the ingredients and mix everything together.
Shape cookies and decorate them with a walnut.
Bake for about 15 minutes.
Let them cool down and enjoy!

Thank you, Carol! I love using flax flour in muffin, brownie or cakey cookie recipes. The only downside is that I don’t like its aroma, so I always add vanilla, cocoa powder or something to mask it. 🙂
