Here are three simple ways to make delicious coconut almond cookies. These cookies are easy to make and don’t require many ingredients. Also, they can be adjusted to everyone’s preferences. You can fill them with chocolate, jam, or leave them plain. They’d be just as delicious! That’s why I think they are perfect for Valentine’s Day and I’m sure that everyone will love them!
What’s more, these cookies are gluten-free and dairy-free. I usually use baking powder to make them, but you can make them paleo-friendly by simply using baking soda.

Ingredients
- 3 large eggs
- ¾ cup ground almonds
- 1 cup desiccated coconut
- 3 tablespoons honey (or more if you prefer your cookies sweeter)
- ½ teaspoon baking powder
- Vanilla extract – optional
- Jam of your choice - optional
- Dark chocolate - optional
Instructions
- Preheat your oven to 170°C (325°F).
- Whisk the eggs to make the mixture light. You can do it by hand.
- Add the honey and vanilla extract, and mix them together.
- Then add the ground almonds and baking powder, and mix again.
- Depending on the size of the eggs, you may not need all the desiccated coconut. So, start adding it little by little while mixing the ingredients. You want a soft and fluffy mixture, otherwise, your cookies will be too dry.
- Take spoonfuls of the mixture and shape balls.
- For the thumbprint version, press the ball to make a small cavity. Carefully, fill with jam.
- For the chocolate version, take a spoonful of the mixture and flatten it in your hand. Add a little bit of chopped chocolate in the middle and roll the dough into a ball.
- Place the cookies on a baking tray covered with baking paper and bake for 12-15 minutes.
- Keep an eye on them because the bottom can get brown easily. They are ready when they are firm to the touch and aren’t stuck to the paper. Their color should be light golden yellow.
- Let them cool down and enjoy!
