Here’s another delicious recipe that’s perfect for Valentine’s Day. These yummy matcha truffles are raw, vegan, dairy-free, gluten-free and paleo-friendly.
They are made with some of my favorite healthy ingredients: matcha powder, pistachios, coconut, dark chocolate and cashew butter. However, the recipe is very flexible and it can be adjusted to your liking (or, to the preferences of the person with whom you are going to share these treats). You can use any type of nuts or nut butter. You can replace the nuts with desiccated coconut or vice versa. Also, you can use white chocolate instead of dark chocolate. It’s up to you!
I recently started using matcha or finely ground green tea in my desserts, and I still don’t put too much of it, because it can be quite overpowering. However, it is rich in antioxidants, vitamins and minerals. Some of the benefits of consuming matcha include detoxification, energy, a boost of the immune system, and prevention of various diseases. It also gives your food a vibrant green color.
I decided not to cover all the truffles in chocolate and rolled a few in ground pistachios instead. I think this made them look prettier and more varied. I’m not going to lie, though: everybody at home liked the chocolate ones better. We just love chocolate, and what’s Valentine’s Day without it?
Ingredients
- ½ cup pistachios
- ¼ cup desiccated coconut
- 4 tablespoon cashew butter
- 1 tablespoon coconut oil
- ½ teaspoon matcha powder
- 3 tablespoons maple syrup
- Vanilla extract – optional
For the chocolate glaze:
- 40 grams (1.4 oz) dark chocolate
- 1 teaspoon coconut oil – optional
Instructions
- Grind the pistachios in your food processor or blender.
- Optional: Keep a few tablespoons of the ground nuts aside for decoration or for rolling the truffles.
- Add the rest of the ingredients and process until everything is well combined.
- If the mixture feels too soft, put it in the fridge for 30 minutes until you can roll balls out of it easily.
- Shape the balls and put them in the fridge for a few hours.
- Once the truffles have hardened up, melt the chocolate and add the coconut oil.
- Dip the truffles into the chocolate and sprinkle the ground pistachios you saved for decoration.
- Put the truffles in the fridge until the chocolate has hardened up.
- Enjoy!
