Raw Christmas Cherry Cookies

Here’s another fantastic Christmas cookie recipe that requires no cooking at all. These cookies are delicious, chocolaty, vegan, low in carbs and rich in healthy fat, vitamins and minerals. Although they are small, they are very satisfying.

 

 

The ingredients are similar to the ingredients of the crust of my raw tart, but I decided to add some cocoa powder too. I also added a few dried cherries for flavor, but that step is optional. What I like about these cookies is that unlike other raw desserts, there’s no need to add dates. I like dates, but sometimes their taste is too strong and I can’t properly enjoy all the other flavors.

 

 

I used candied cherries to decorate my cookies and make them look more special and festive. I actually cut my cherries, so I put half a cherry on each cookie. You can use whole nuts and dried fruit instead; or just leave them plain. They are delicious either way.

 

 

Ingredients

1 cup of nuts of your choice (I used almonds and walnuts)
2 tablespoons of shredded coconut
1 tablespoon of coconut oil
2 tablespoons of maple syrup
2 tablespoons of cocoa or cacao powder
5-6 dried cherries and some water to soak them – optional

 

Directions

Soak your dried cherries in some water for about an hour. Then take them out of the water, but keep the water as well.

Put the nuts and the shredded coconut into the food processor and grind them.

 

Add the rest of the ingredients and grind until everything is well combined and has the consistency of wet sand. It should stay together when you press it. If the mixture feels too dry, add a few drops of water (you can use the cherry water too).

 

Take spoonfuls of the mixture and shape them like balls.The mixture is a little dry and you may not be able to roll balls, so just squeeze the mixture to make it look like a ball. Add half a candied cherry or a nut and press the ball between your hands to make it flatter. Don’t worry: once chilled, everything blends well and the cookie stays together.

 

You should be able to make between 12 and 15 small cookies, but since I was tempted to eat some of the mixture, I made only 12. 😀

Put the cookies in the fridge for a couple of hours and enjoy.
