In fall, everybody is excited about pumpkins, grapes, and pomegranates, but I’m all about apples!
Here is a delicious and very easy-to-make apple crumble bar recipe that’s completely vegan and gluten-free. If you have gluten intolerance, remember to use gluten-free oats. Sometimes, oats can be gluten cross-contaminated.
What makes these yummy apple bars very easy to prepare is that I am baking the crust, the apples and the crumble topping all at once! If you want your apples to be super soft, you can pre-cook them a little bit. However, I don’t find this necessary, and I like it when apples have a little bit of texture.
As always, you can use any nut butter, plant-based milk, and sweetener of your choice. The sweetener I used to make the crust was maple syrup, and I added some coconut sugar to the apple filling. I also used coconut milk and tahini to make these apple bars.
If you don’t want to use desiccated coconut for the crust, use some more oat flour instead.
Ingredients
For the crust
- 1 ½ cup oat flour
- ½ cup desiccated coconut
- 4 tablespoons coconut oil
- 2 tablespoons tahini (or another nut butter)
- 4 tablespoons maple syrup (or any sweetener of your choice, to taste)
- 1/3 cup plant-based milk of your choice
For the filling
- 2 large apples
- ½ orange
- 2 tablespoons coconut sugar (or another sweetener of your choice)
- Cinnamon to taste
For the crumble topping
- 3 tablespoons of the crust mixture
- 1/2 cup mixed rolled oats, nuts, and dried fruit of your choice
Instructions
For the crust
- Mix the oat flour and desiccated coconut with coconut oil, tahini, and maple syrup.
- Add the milk little by little while you keep mixing. You may not need to use all of it if the mixture feels too wet.
- Save 2-3 tablespoons of the mixture for the crumble topping.
- Cover your tray with baking paper. The tray I used is 24 x 18 cm (9 x 7 inch).
- Spread the crust mixture onto it and make holes using a fork.
For the apples
- In another bowl, put the peeled and chopped apples.
- Add the juice from half an orange, coconut sugar and cinnamon to taste. Mix everything and spread over the crust.
For the crumble topping
- To the crust mixture you saved, add rolled oats, nuts and dried fruit of your choice.
- Mix everything and sprinkle it over the apples.
- Bake in a preheated oven at 180°C (350°F) for about 30 minutes or until golden-brown. If your oven has a fan, you should bake on a slightly lower temperature.
- Let it cool down completely before you slice it.
- Enjoy!
