Vegan Coconut And Biscuit Balls

Do you know the cream cheese and crushed biscuits balls recipes? Here’s a healthier and more delicious version that can be easily turned vegan as well.

Instead of cream cheese we are going to use coconut whipped cream. To make coconut whipped cream you need a can of full fat coconut milk, which has to stay in the refrigerator overnight. Then open the can, put the solid fat in a bowl and whip it until it turns into cream. See full recipe here.

The other main ingredient for the balls recipe is plain biscuits of your choice; if you want, you can use vegan ones.

 

Ingredients

  • 200 grams of biscuits
  • 2/3 cup of coconut whipped cream
  • Cinnamon
  • Oat flour to roll the balls into

 

Optional

  • Cacao powder or cocoa powder
  • Vanilla extract
  • Sweetener of your choice (depending on the sweetness of your biscuits)
  • Shredded coconut

 

Preparation

Crush the biscuits the way you want: you can do it by hand or using a food processor. Add the coconut cream, the cinnamon and any other additions you want to use, and mix everything well.

Make balls out of the mixture and roll them into oat flour (if you don’t have oat flour, just put some oats in the food processor, or use crushed nuts or shredded coconut).

Put them in the refrigerator for at least a few hours or overnight: the longer they stay, the tastier they are. If you want, you can dip them in melted chocolate once they harden a bit. I made this recipe for my friends and they were fascinated!
