Do you remember my 2-ingredient chia and almond milk pudding? Here’s the chocolate version, but this time I used thick coconut milk instead of almond milk, and I loved its texture.
Ingredients for 1 cup of pudding
- 2/3 cup of coconut milk
- 1 tablespoon of chia seeds
- 1 tablespoon of cocoa or cacao powder
- Sweetener of your choice
Preparation
Pour the milk in a glass, cup or a jar, add the sweetener and the cocoa powder and mix everything well. Then add the chia seeds and mix again. Cover the glass or the jar and put it in the refrigerator for at least an hour. That’s all and it tastes heavenly!
Bonus idea
You can make coconut whipped cream topping for your chocolate pudding. See recipe here.
