3-Ingredient Peanut Butter Cookies

Here’s a super easy-to-make recipe for delicious peanut butter cookies that’s completely dairy-free, gluten-free and vegan. It requires only 3 ingredients which are maple syrup, peanut butter and oat flour. Check out my homemade peanut butter recipe here.

By the way, if you don’t have maple syrup, you can mix some water and brown sugar instead. This way the cookies are a bit softer and chewy, but delicious regardless. Maybe they’ll taste better if you use milk instead of water.

 

I also tried making them with tahini instead of peanut butter and they turned out great as well. I tried to put the cookie mixture in some cookie cutters of different shapes. Maybe not the brightest idea, since they kind of lose their shape while baking, but taste is what matters. 😀

 

 

Here’s the main recipe:

 

Ingredients

  • 2/3 cup of peanut butter
  • ½ cup of maple syrup
  • ½ cup of oat flour

 

Directions

Preheat the oven to 180°C (350°F).

Mix the maple syrup and the peanut butter. Then add the oat flour little by little and mix everything well.

 

 

With a spoon, or with wet hands put some balls out of the mixture onto a baking tray that’s covered with baking paper. Leave enough space between them and flatten them out a bit. Bake for 10-12 minutes. Be careful not to touch the biscuits because they are very soft while hot and you may ruin their shape. However, they will get hard when they cool down.
