One-Bowl Christmas Muffins

Here’s a super easy-to-make recipe for delicious vegan gluten-free muffins. They require one bowl, a few ingredients and about half an hour to prepare, which makes them a perfect last minute Christmas dessert. They are also very cute.

I used coconut milk for this recipe, but you can use any milk you like. I also decorated my muffins with some dried fruit, candied fruit and chocolate chips.

This recipe makes about 6 muffins.

 

 

Ingredients

  • 1 tablespoon of flaxseed meal
  • 3 tablespoons of water
  • 1 cup of coconut milk
  • Sweetener of your choice
  • Vanilla extract or cinnamon
  • 1 cup of rice flour
  • 1 cup of oat flour
  • 1 teaspoon of baking powder
  • Dried fruit of your choice
  • Candied fruit of your choice – optional
  • Chocolate chips – optional

 

Directions

Preheat your oven to 180°C (350°F).

Combine the flaxseed meal or ground flaxseed with the water and mix them well.

 

Add the coconut milk, sweetener of your choice, vanilla extract and cinnamon, and mix again.

 

Add the rice flour, the oat flour and the baking powder, and mix everything well.

 

Then, add the dried fruit and some of the candied fruit and some of the chocolate chips.

 

Dump the mixture into muffin cups and decorate them with the rest of the candied fruit and the chocolate chips.

 

Bake for 20-25 minutes and check them with a toothpick after 20 minutes.

Let them cool down and enjoy!
