Delicious Banana Oat Muffins

 

I love muffins and cakes, but baking them is difficult for me and they always turn out undercooked or sticky. If you are like me, here’s a recipe that works no matter how clumsy you are, even if you don’t use the exact quantities. I usually eyeball the mixture and it always turns out great.

 

 

You need

  • 2 mashed bananas
  • 2 eggs
  • 1 cup of oat flour or ground oats
  • Cinnamon
  • 1 teaspoon of baking powder
  • A few tablespoons of milk – optional (if you think the mixture is too dry)
  • A pinch of salt – optional
  • Cacao powder or cocoa powder – optional

 

 

Preparation
Mash two ripe bananas with a fork, add the other ingredient and mix everything well. You don’t need any additional sweetener, since bananas are sweet enough. You can make chocolate muffins if you add cocoa or cacao powder. You can also add chocolate chips, raisins, fruits or anything you want.

 

 

Bake in preheated oven for 25-30 minutes on 180°C (350°F). Keep an eye on them, so they won’t burn. Give them a few minutes to cool down a bit after they are ready. What could be better than the delicious aroma of bananas and cinnamon?
