I’m excited to share with you this delicious carrot and apple oat muffin recipe. These muffins are gluten-free, dairy-free, vegan and contain a lot of fiber.
They are a great breakfast, a wonderful dessert and a perfect snack any time of the day.
Ingredients
Dry ingredients:
- 2 cups of oat flour
- 1 tablespoon of baking powder
- 1 teaspoon of baking soda
- A pinch of salt
- A pinch of sugar
- 1 tablespoon of cinnamon
- 1 teaspoon of ginger – optional
Wet ingredients:
- 1 medium ripe banana
- 2 medium apples
- 1 medium carrot
- ¼ cup of milk of your choice (or water)
- Sweetener of your choice – optional
Directions
Preheat the oven to 180°C (350°F).
Mix all the dry ingredients in a bowl.
Take another bowl for the wet ingredients. Mash the banana, grind the apples and the carrot, and add the milk. Don’t worry if the mixture looks a bit dry, the apples will release their moisture while baking.. If you still want, you can add some more milk. Now is the time to add your sweetener, but I usually don’t do this because bananas and apples are sweet enough for me. Mix all the wet ingredients thoroughly.
Then, add the wet ingredients to the dry ones and combine them.
Scoop the mixture onto a muffin tray and bake for about 30 minutes.
