Vegan White Chocolate Cherry Truffles

My healthy dessert for today is raw vegan white chocolate truffles. These delicious truffles are made of a coconut and hazelnut mixture covered in white chocolate. You can use any type of nuts, or you can just double the amount of the shredded coconut. I put a glace cherry (candied cherry / maraschino cherry) inside, but for a healthier option you can put a dried cherry or a whole hazelnut.

 

 

If you don’t have white chocolate, you can make it yourself by combining powdered sugar with cocoa butter or coconut oil. I added some cinnamon to the white chocolate, but that’s optional.

 

 

Ingredients

  • ½ cup of hazelnuts
  • ½ cup of shredded coconut
  • 3 tablespoons of coconut oil
  • 3 tablespoons of maple syrup
  • 1-2 tablespoons of coconut milk or water
  • ½ cup of melted white chocolate or white chocolate chips (vegan)
  • About 15 glace cherries (vegan) – optional
  • Cinnamon – optional

 

Directions

Grind the hazelnuts and the shredded coconut. Add the coconut oil, the maple syrup, the milk or water, and process again. Put the mixture into the fridge for about half an hour.

Make small balls out of the mixture putting a cherry inside, and freeze them for another half an hour. Melt the chocolate, add cinnamon and roll the coconut balls into it. Put them in the freezer until the chocolate is hard.
