Raw Coconut Macaroons


Here’s a delicious coconut macaroon recipe that doesn’t require cooking or baking. These yummy macaroons are not only easy to make, but they are perfect for a vegan or gluten-free diet.

However, if you are trying to avoid fats, even healthy fats from nuts, seeds and coconut, this may not be the best recipe for you.

You can use any nut or seed butter you like to make these treats. I often use tahini, but they would be great with almond butter too.

You can decorate them with nuts, dried fruit or chocolate, or just leave them plain. You can also shape them into balls instead.

Their texture is a little bit harder and drier than my typical Raffaellos. By the way, you can find a ton of Raffaello truffle recipes on my blog.

Raw Coconut Macaroons (Vegan & Paleo)


  • 4 tablespoons nut butter
  • 2 tablespoons coconut oil
  • 1 cup desiccated coconut
  • 4 tablespoons maple syrup
  • Vanilla extract - optional
    For decoration
  • 40 g (1.4 oz) chocolate
  • Nuts and dried fruit of your choice


  • If your coconut oil is too hard, you can melt it a little so it won’t be lumpy in the mixture.
  • Then, mix the coconut oil with tahini, maple syrup and vanilla extract.
  • Add the desiccated coconut and mix until everything is well combined.
  • Shape macaroons out of the mixture making them as big or small as you want. If you find the mixture too dry to work with, you can shape the macaroons by using a piece of plastic wrap, or even better: use a small scoop.
  • Optionally, decorate them with dried fruit or nuts.
  • Leave them in the fridge to harden up for an hour.
  • Melt the chocolate and add the coconut oil.
  • Dip the macaroons in the chocolate, and drizzle some chocolate on top.
  • Leave them in the fridge until everything is set up.
  • Enjoy!
