3-Ingredient Low-Carb Paleo Cookies

Today’s healthy dessert recipe is for delicious and easy-to-make cookies that don’t require any flour or milk. This makes them gluten-free and paleo-friendly as well. They are full of protein, healthy fats, vitamins and minerals.

 

The two main ingredients you need are nut butter of your choice (I’m using tahini, but you can use any nut butter you like) and an egg.

Why are they healthy? Tahini is rich in healthy fats and amino acids, protein, vitamins and numerous minerals like calcium, magnesium and iron. It helps balance hormones and regulates blood pressure and cholesterol. Sesame is beneficial for skin and hair health as well.

Eggs are also incredibly nutritious since they have everything needed to make a new organism in them.

The third ingredient you should add is some sugar or a sweetener of your choice. I put 1 teaspoon and that was enough for me, but you can put more if you prefer them sweeter. A quarter of a teaspoon of baking soda is recommended too, but I didn’t have any and my cookies still turned out great. You can add some raisins if you want, but that’s optional too.

 

The taste of the cookies is very rich and nutty. The texture is very similar to a delicious pancake and they almost melt in your mouth. What’s more, they are also very satisfying.

 

Ingredients

  • ½ cup of tahini (or nut butter of your choice)
  • 1 egg
  • Sweetener of your choice
  • Raisins – optional
  • ½ teaspoon of baking soda – optional

 

Directions

Preheat your oven to 180°C (350°F), or a little lower if your oven has a fan.

Mix the nut butter with the sweetener. Add the eggs and the baking soda, in case you are using any. Mix until everything is well combined; the mixture should be thick and sticky, but it’s also rather runny.

 

Add the raisins to the mixture or just put them as a decoration on top of the cookies.

Put some baking paper (or aluminium foil in my case) on your baking tray. Pour about 2/3 of a tablespoon of the mixture onto the paper to shape the cookies. Leave enough space between them, because they’ll expand in the oven.

 

Bake for about 10 minutes and keep an eye on them.
